COMPARISON OF OIL QUALITY CRITERIA OF DIFFERENT SESAME (Sesamum indicum L.) VARIETIES

In this study, the oil quality criteria of 20 sesame varieties with native and foreign origin were compared. The results showed that there were significant differences in the oil and fatty acid contents, but less differences in the oil stability criteria and the nutritional quality index values among the varieties.
